- 250 g low-fat quark
- 2 eggs
- 80 g oat flour
- 50 ml milk
- 1 tsp baking powder, vanilla, a little sweetener
Mix smooth, rest for 5 minutes, bake in a lightly greased waffle iron until golden. About 25 g protein per portion (3 waffles).
Toppings
- Sweet: skyr with berries (+10 g), peanut butter and banana, warm apple-cinnamon compote
- Savoury: leave out vanilla and sweetener, add herbs and 30 g grated cheese – top with smoked salmon or turkey ham and cottage cheese
Tips
- Soft instead of crispy? Bake 1 minute longer and let them cool on a rack, not a plate.
- Freeze leftover waffles and reheat them in the toaster.
