High-Protein Pancakes Without Protein Powder: 5 Easy Recipes
Share
You don't need protein powder for high-protein pancakes. Quark, cottage cheese, eggs and oats get you to 25–40 g per serving – and the pancakes stay fluffy instead of rubbery.

Replace part of the flour with oats and part of the milk with quark or cottage cheese. Add one extra egg white per serving. Cook on medium heat – high-protein batter burns faster than normal batter.
1. Quark oat pancakes – about 35 g protein
Blend 250 g low-fat quark, 2 eggs, 50 g oats, half a teaspoon baking powder and a pinch of salt. Rest 5 minutes, then cook small pancakes. Top with berries.
2. Cottage cheese pancakes – about 30 g protein
Blend 200 g cottage cheese, 2 eggs and 40 g flour or oats until smooth. Thin and slightly tangy – good with apple and cinnamon.
3. Banana egg pancakes plus quark topping – about 25 g protein
Mash 1 ripe banana with 2 eggs and 1 egg white, add 20 g oats. Cook small pancakes and top with 150 g vanilla-flavoured quark (stir in a little vanilla and sweetener yourself).
4. Savoury spinach pancakes – about 30 g protein
Blend 2 eggs, 150 g quark, a handful of spinach, 40 g oats, salt and pepper. Serve with smoked salmon or turkey ham for extra protein.
5. Meal-prep sheet pancake – about 35 g per portion
Quadruple recipe 1, pour onto a lined baking tray and bake at 180 °C for about 18–20 minutes. Cut into four portions – breakfast for four days, eaten cold or warmed.
Tips
- Let the batter rest – oats need a few minutes to soak.
- Small pancakes flip more easily than large ones.
- Too dry? Add a splash of milk. Too runny? Add a spoon of oats.
