High-Protein Käsespätzle: The Swabian Classic with 40 g Protein
Share
Käsespätzle are comfort food – and usually a fat bomb. Use a lighter cheese, stir in cottage cheese and you keep the creamy, cheesy pan with roughly 40 g protein per portion.
Base (2 portions): 400 g fresh spätzle, 150 g light grated cheese (e.g. light Emmental), 150 g cottage cheese, 2 onions. Fry the onions until golden. Heat the spätzle in a pan, stir in cottage cheese and cheese until melted, season with pepper and nutmeg, top with the onions.
