Protein Kaiserschmarrn: The Austrian Classic with 40 g Protein

Classic Kaiserschmarrn is mostly flour, sugar and butter. Swap half the flour for quark and oats and you get a fluffy pan dessert – or breakfast – with roughly 40 g protein.

Base recipe (1 big portion): 3 eggs, 150 g low-fat quark, 40 g oat flour (blended oats), a pinch of salt, a little sweetener or honey, raisins if you like. Whisk, pour into a non-stick pan with a little butter, cook on medium heat until the bottom is golden, flip in pieces, tear apart with two forks and finish for 2 minutes.
