Quark cheesecake (8 slices, 20 cm tin)

  • 750 g low-fat quark
  • 3 eggs
  • 1 sachet vanilla custard powder (about 37 g)
  • 80–100 g sugar or sweetener to taste
  • Zest and juice of half a lemon
  • Optional base: 100 g crushed oat biscuits with 30 g melted butter

Press the base into a lined springform tin. Whisk the remaining ingredients smooth and pour on top. Bake at 160 °C (fan 150 °C) for about 60 minutes, then switch off the oven and leave it inside with the door slightly open for 30 minutes. Chill for at least 4 hours. About 14 g protein per slice.

Variations

  • Without base – fewer calories, same protein.
  • Berry topping – warm frozen berries briefly and spread over the chilled cake.
  • No-bake cups – 200 g quark or skyr with vanilla and lemon over a crumbled biscuit. About 25 g per cup, ready in 3 minutes.

Tips against cracks

  • Do not over-whisk – too much air makes it rise and then crack.
  • Lower temperature and slow cooling in the oven help most.
